You might think takeaways are a relatively recent invention. Not so. The idea of food prepared to be taken away for consumption is ancient, and evidence can be found in both Ancient Greece and Ancient Rome. In the volcanic ruins of Pompeii, where much of life was frozen in time when the disaster struck, scientists have found hundreds of small service counters which are thought to have provided food to be taken away. It also appears that cooking was not common in many Pompeian homes, supporting the theory that food was brought from elsewhere.
Into medieval times and across Europe there were variations on the theme of takeaway food. Stalls selling hot pies, cooked poultry, roasted meats, cakes and cheeses were common in England and France; these were perhaps the mainstay of many people’s diets, particularly the poorer sections of the population who were not in a position to cook their own food. Obviously not subject to the strict monitoring of today, these sellers were often as not the cause of illness due to the poor quality of their wares or the disregard for hygiene which they practised when selling them.
Over in China, pastries were the most popular takeaway food and a number of providers were so successful that they had impressive premises on which they prepared their dishes. The Egyptians would go prepared, carrying blankets to sit upon while they ate outdoors and in Turkey, food vendors would set up their stalls at busy crossroads.
Street food sellers continued to ply their trade across the world and into the New World. In the early 1700s there were so many in New York that it became a problem and they were first restricted and then banned altogether for a while. But across the USA in the 18th and 19th centuries many people, including a large number of women, made their living by selling food on the street, be it sweets, cakes and biscuits or other traditional hot savouries.
It was the Industrial Revolution which saw the beginning of the widespread availability of takeaway food. The creation and development of cities and a growing urban population offered new opportunities and a fast growing need for food. Poor general diets meant takeaway food became an important staple in the nutrition of the population.
As the 20th century arrived the British were already known for their fish and chips, and the Americans were eating hamburgers from the East Coast to the Pacific. The growth in popularity in eating out, the availability of refrigeration, the greater amount and variety of foods available, and the massive numbers of immigrants moving around the world led to a steady increase in takeaway outlets, and as the leisure age began and people became more mobile and affluent, the choices continued to rise to the point where as we moved into the 21st century, the takeaway food industry had become a global phenomenon with an annual turnover well into the billions.
So spare a thought for those long forgotten hot pie sellers and those pastry pioneers who paved the way for what we all take for granted today. Without them we’d all be starving or cooking at home every night, and neither of those options are appealing.
